We are fortunate to live in a city which has one of the most exciting culinary scenes in North America, where chefs are passionate about the ingredients that they use, are committed to pushing boundaries and are creating dishes to excite the diners palate. I have created this Signature Dishes Festival to put the spotlight on these creative chefs and their restaurants who support their creativity and passion; said Richard Wolak, this festival is also a challenge featuring 15 participating Chefs and their Restaurants in Vancouver, Burnaby, Richmond and Langley where diners are invited to vote for their favourite dishes, this festival runs from September 6-30, 2013.

Chefs create a must try signature dish (this dish can-not be on the restaurant’s menu, it must be a new dish created by the chef) to enter in this Chefs Signature Dishes Festival. The Chefs creation can be simple to fancy, using unique and innovative ingredients, any type, as nutritious or indulgent as he/she wants, I told them to be creative and imaginative and to stay true to their type of cuisine or restaurant

Men are from Mars and Women are from Venus.  But does this also work for chefs cooking?  Let’s find out with the husband and wife chef couple from Provence Restaurants.  Details from this match up / throw down are below.

(Vancouver, BC) — On May 23rd Chefs Alessandra and Jean-Francis Quaglia will celebrate 21 years of marriage. Not only are they a couple, but they are also both chefs and business partners owning Provence Restaurants – Provence Mediterranean Grill in Point Grey,Provence Marinaside in Yaletown and the newest venture TWB – The Wine Bar next door to Provence Marinaside. While Jean-Francis is Executive Chef for all locations, he devotes most of his time to Provence Marinaside (P2) while Alessandra casts a watchful eye over Provence Mediterranean Grill (P1). Over the years a friendly rivalry has blossomed between P1 and P2 – each offering slightly different menus and completely different ambiance.
 
On May 29th, Provence Mediterranean Grill will be the site for Husband vs. Wife – a Chef’s Challenge. Who does the better halibut? Alessandra? Jean-Francis? You be the judge.
 
For this one night only P1 will offer a set three-course set menu for $50 (including tax and gratuity but not beverages). The first course is a choice from the restaurant’s antipasti case and dessert is Cherry Chocolate Clafoutis. It’s the main course where the halibut throw down happens. Two very different versions of halibut will be offered – one by the wife, the other by the husband. Guests won’t know who has created which to keep the competition unbiased. At the end of the evening Provence will tally up which main course sold the most and will announce the winner via social media and in its newsletter.
 
The idea came to Alessandra when the family (they have two sons who have grown up in the restaurants) was on a recent vacation. “We had many nights of cooking with the boys and a little competition developed to see who the best cook was. It was a lot of fun, so we decided to try it at the restaurant.”
 
At the moment, this event is planned as a one-off. However, if there is a lot of demand and the event quickly sells out; they may consider repeating it on May 30th and then doing a different competition at Provence Marinaside next month.

Learn something new every day.  It helps your brain.  So does eating fish.  Where is this discussion going you ask?  Well to the origin of April Fools, and the French restaurants, Provence in Vancouver, where you can enjoy a special fish-based menu.  Still confused?  Read the press release below.  Enjoy!

(Vancouver, BC) – We’ve all experienced the silly fun that takes place every April 1st – ‘Fool’s Day. However, do you know that the tradition probably started in France where it is called Poisson d’Avril? ‘Poisson d’Avril?’ Doesn’t that translate as ‘April’s fish?’ Like a Dadaist film, Poisson d’Avril doesn’t quite make sense. However it does make for a whale of a good time.

Being French, Provence Restaurants believe that life is to be enjoyed to the full and have transformed a one-day bit of foolery into a month-long celebration of all things ‘fish’ at both of their locations – Marinaside in Yaletown and Mediterranean Grill in Point Grey. Starting April 1st and through to the end of the month, each restaurant will be featuring a different three-course prix-fixe Poisson d’Avril Menu value priced at $45.

Both of these ‘fish forward’ menus offer a ‘school’ of choices – from trout to tuna, sablefish to sturgeon, shellfish to sea bream and everything imaginable in the bouillabaisse; there is something to please every fish fanatic. Grilled, poached, smoked, ceviche, brandade and in soup are just some of the many ways Provence will prepare the ‘finny fare.’ Not a fish lover? Not to worry – there are plenty of non-fish choices available on the regular menu.

The menu concludes with a choice of something decadent from Provence’s regular selection of hand-crafted desserts. Tarte au Citron anyone? Provence’s signature Lemon Tarte is considered the perfect end to a fishy feast.

“As an inaugural member of Ocean Wise, we serve only fish that has been harvested in a sustainable and responsible manner. That still gives us plenty of choice,” states Provence’s Executive Chef and Owner, Jean-Francis Quaglia. “Poisson d’Avril is an opportunity to welcome spring with a bit of fun. This is our fifth year doing it and everyone gets in on the fun – including some of the staff and their children who have created the whimsical fish that adorn the restaurant and menus.”

In France, Poisson d’Avril is an ‘excuse’ to play a practical joke or two. People attach fish (usually paper cut-outs) to the back of their friends and family, who, unaware of the addition to their wardrobe, continue about the day with the new accessory until someone shouts ‘Poisson d’Avril!’ and the jinx is up. During April, some lucky Provence patrons will find a paper fish under their plate or taped to their back. These Poissons come with a prize – perhaps a complimentary appetizer, meal discount, gift certificate or a copy of New World Provence by Chefs Jean-Francis and Alessandra Quaglia; are some of the possibilities.

While there is something very fishy happening at Provence Restaurants this April, diners will agree that the Poisson d’Avril menus are no joke!

For world flavours, Todd Bright, from Wild Rice, creates contemporary Chinese cuisine, and Herve Martin, from The French Table, brings the taste of classic European bistro dining.
 
Sommelier-selected wines provided by the Mark Anthony Group explore the rich diversity of the Okanagan Valley region. The featured wineries are Ganton & Larsen Prospect Winery and Rigamarole Wines. Their flagship brand, the award-winning Mission Hill Family Estate will be the signature wine for the series.

Proprietor and author Chef John Howie, is off to Super Bowl XLVI (46) in Indianapolis in 10 days.  Although Howie is as renowned for his love of sports as he is as a restaurateur (Seastar Restaurant & Raw Bar in Bellevue & Seattle, John Howie Steak – Bellevue and SPORT Restaurant – Seattle), he will not be down on the playing field or sitting in the stands watching the Patriots and Giants face off.  Rather, in a combo of his passions, he will be representing the Northwest and the Seattle Seahawks on the eve of the big game at the “Taste of the NFL”, a strolling food and wine event.  More than 35 food stations, each from an NFL city, will provide food and wine samples for guests to savor.  Each chef is paired with an NFL player at their station, either past or current, and Howie will again be joined by Seahawks defensive lineman Craig Terrill.  The evening includes a silent auction with hundreds of one-of-a-kind sports and entertainment items as well as incredible getaways.  This year it will conclude with a live concert performance by multi-platinum and award-winning country singer and songwriter Sara Evans.  Titled the Party with a Purpose, the proceeds from the event will benefit food banks in each of the NFL cities (in Seattle Food Lifeline), with an emphasis on the Super Bowl host city’s food bank.

Howie has appeared at the “Taste of the NFL” every year since 2004.  This year he will be preparing Ancho Chili Applewood Scented King Salmon on Southwestern Roasted Corn Mashed Potatoes with Sweet Chili Hollandaise and Lime Cream from his new cookbook Passion & Palate: Recipes for a Generous Table.  Since 1992, Taste has distributed more than $11 million to hunger relief organizations nationwide.
