[Vancouver, BC]: Dish ‘n Dazzle, one of Vancouver’s most-anticipated wine, food and cocktail events, returns to the Vancouver Convention Centre (999 Canada Place) on Thursday, May 18. Tickets are onsale now for $89 per person, exclusively online.
With a tip of the hat to the hospitality industry, the organizers offer six ingredients as a recipe for the perfect night out:
Wine: Each year, the BC Hospitality Foundation partners with a new wine country. This edition features Wines of Chile. Up to fifteen wineries from Chile will share the latest vintages for wine lovers. New for this year will be an exclusive “Pequeña table”, offering a chance to experience limited production wines from Chile’s boutique wineries.
Food: Up to fourteen of BC’s finest chefs and restaurants will be on hand to serve unique culinary creations, some of which were created just for Dish ‘n Dazzle. The complete list will be available soon at dishndazzle.com.
Cocktails: The evening’s signature cocktail competition invites six of the city’s top bartenders to craft all-new libations with a Chilean theme. Each bartender is competing for the coveted Derek Vanderheide trophy, named in honour of a dearly departed Vancouver bartender.
Music: The evening wouldn’t be complete without live music from celebrated Vancouver-based R&B and blues band Les Is More, who never fail to ignite the crowd.
Silent Auction / Prizes: The curated Silent Auction and Grand Prize Raffle is always one of the highlights of the evening, featuring one-of-a-kind items including hotel stays, adventure packages, and much more.
Fundraising: Dish ‘n Dazzle is the signature fundraiser for the BC Hospitality Foundation’s latest beneficiaries and scholarship winners. Funds raised from this event have helped support nearly 275 industry workers and students with more than $800,000 in financial assistance.

(Vancouver, BC) – Fifteen years goes by in the blink of an eye, yet it is a long time in the restaurant world.  On May 7, 1999 John Blakeley opened Pastis on a quiet strip of West 4th in Kitsilano. The only other restaurant in the area was the iconic Bishop’s.  During the intervening years, Bistro Pastis has seen a lot of change – both within the restaurant itself and in the neighbourhood.  Pastis morphed from fine-dining to Bistro Pastis – a cosy and casual neighbourhood bistro, John Blakeley was knighted by the government of France and is now a Chevalier, and a vibrant restaurant scene sprung up along W.4th Avenue – attracting diners from across the city. During the 15 years, some of Vancouver’s finest chefs have headed the kitchens at Bistro Pastis – Dino Renaerts, Brad Miller and Tobias Grignon are all Pastis alumni.

To celebrate, John Blakeley has invited the aforementioned chefs along with current Executive Chef  Spencer Watts and Pastry Chef Heather Rumsby to join him in creating a very special anniversary dinner on May 7th.  Starting with Cocktails and Canapes at 5:30 p.m., guests will then sit down to a six-course dinner complete with wine pairings – each course designed by one of the five Bistro Pastis chefs plus a course designed by Mr. Blakeley. Mr. Blakeley also created the wine pairings to complement each course. Bistro Pastis wishes to thank the following wine agents, food distributors and suppliers for their generous support of this event: A & B Rentals, Charton Hobbs, Continental Importers, Fresh Point, Grady Wines, Liberty Wines, Mark Anthony Wines, Ponderosa Mushrooms, Select Wines, Seven Seas, and Trimpac.

This very special dinner is priced at $160 pp including wine pairing, taxes and gratuity with proceeds going to benefit the BC Hospitality Foundation. Tickets are essential and can be made by calling the restaurant at 604-731-5020.

For those of you who cannot join the restaurant on May 7th for its birthday dinner, Bistro Pastis is offering diners a special gift. From May 8th through June 8th, Bistro Pastis is giving a 25 per cent discount off the price of dinner (food and wine). “It’s my way of thanking our guests for their patronage over the years. Did You Know October 20 is Wild Rice’s 12th Anniversary?

About Argentina and Their Wine

Argentina is the fifth largest producer of wine in the world and produces about four times as much wine as Chile.  Spanish colonization in 1541 brought over Vitis Vinifera vines and the first record of a vineyard dates back to 1557 in Santiago del Estero. Vines came from different sources, including Italy.

The country is known for Malbec, Bonarda, Tempranillo, Barbera, Lambrusco, Cabernet Sauvignon, Pinot Noir, Syrah and others. The most widely planted white varietals are Pedro Xeminez, Moscatel, Torrontes, Chenin Blanc, Semillon, Riesling, Chardonnay and others.

BC Hospitality Foundation’s Tip Out To Help

The foundation, formed in fall 2006, was inspired by the desire to help long-time wine agent Michael Willingham with the money he needed for both a costly surgery and the rehabilitation time that would follow.

This desire to help Michael brought forward a need to establish a trust fund that could be used to help anyone within the food service, beverage, and hospitality industry who required extraordinary support due to illness or accident.

On Thursday, May 30 at the Pan Pacific Hotel (999 Canada Place), The BC Hospitality Foundation  and  Wines of Chile present a spectacular night of food, wine, and cocktails, that is sure to delight and entertain. 19 wineries from across Chile’s diverse wine regions will pair up with food from 12 of Vancouver’s best restaurants and a high-stakes cocktail competition will ensure things stay spirited!   The cocktail competition event will  feature custom cocktails created some by some of the finest mixologists in BC.  Guests will have a chance to taste these new drinks and be on-hand as a winner is announced. A large silent auction and raffle will round out the evening.

Enjoy Chilean Wine at the BC Hospitality Foundation Dish & Dazzle

On Friday, June 17, 2011, you will be able to sample some fantastic wines from Chile, and help support the BC Hospitality Foundation’s Dish & Dazzle. What is the BC Hospitality Foundation?  The Foundation was formed in 2006 to help wine agent Michael J. Willingham pay for a costly surgery and subsequent rehabilitation following a stroke. Michael’s situation highlighted the need to establish a trust fund that could be used as a last-resort safety net for other industry members in need – who may or may not have benefits, be covered by employment insurance, or require assistance beyond traditional medical benefits. The Foundation benefits will cover people in the industry – food suppliers, hoteliers, media, publicists, retailers, vintners and wine sales representatives (from BCHR website).

The Dish & Dazzle is one of their fundraising efforts. The location will be the fabulous Fairmont Pacific Rim in downtown Vancouver. The schedule will include :

  • wines from 25 Chilean wineries with each pouring up to five different wines at their table,
  • four focus stations highlighting Sauvignon Blanc, Syrah, Carmenere & organic wine
  • food from 12 fine restaurants,
  • an exciting “sour” themed cocktail competition,
  • live entertainment and
  • silent auction

Dish n’Dazzle, will be a showcase for Vancouver’s dynamic hospitality industry. Restaurants, wineries and premium liquors will be featured in the main “tasting room” and guests will move from station to station in an interactive, informal setting.

If you have never tasted Carmenere wine before, this would be a good introduction.  Carmenere is a “forgotten” grape, originally from Bordeaux, France, but loves the climate of Chile and has become Chile’s signature red grape!  It has been mistaken in the past in Chile for Merlot.  Carmenere is dark red in colour with cherries and red fruit flavours, spice and sometimes a bit of green pepper.  The tannins are soft, making this wine easy to drink.  It goes well with BBQ so think about buying some carmenere for summer.  Here are some Carmenere that I have reviewed in the past:

  • Vina Santa Rita Pehuen Carmenere 2005 (Chile). Pehuen Carmenere is a premium wine from Vina Santa Rita.  Opaque purple in the glass. Dark fruit nose with a whiff of capsicum. Full bodied but with soft tannins.  Ripe black cherries, vanilla and spice on the palate.  A very long length.  Here is a Carmenere you should try.
  • Vina Errazuriz Max Reserva Carmenere 2007  (Chile). This wine spent 12 months oak aging. 2007 is the first vintage for the vines selected for this wine. It had a deep purple color in the glass. Cassis, smoke, black cherry, and oak on the nose. Black cherries, vanilla and cassis flavours. Smooth tannins. It had a long length, with a spice and red cherry finish. Highly recommended.
  • Montes Alpha Carmenere 2007 (Chile). This wine was deep purple in the glass. Capsicum, back fruit and vanilla aromas. On the palate I tasted red and black cherries, vanilla and a slight hint of capsicum. This wine had a soft, round mouth feel and a long length.
  • Viu Manent Reserva Carmenere 2008 (Chile). Deep purple colour in the glass. Vanilla, black fruits and a slight hint of capsicum on the nose. It was quite round in the mouth, with vanilla and ripe black fruit flavours, and a peppery finish.
